Tortilla Soup

Throw all these in a crockpot and cook on high 3-5 hours or low 5-7. I am using frozen chicken breasts so I am cooking on high for 6 hours.

3 chicken breasts
1 can rotelle
1 can cream of corn
1 can chicken and rice soup
1 can black beans
2 cups chicken broth

Serve over baked Tortilla Scoops

Apple Crumb Muffins

Makes 12 Servings 1 Muffin each
they freeze well...
Batter
2 C Flour
1/4C sugar
1T baking Powder
1tsp apple pie spice
1C skim milk
1 Sm Golden Delicious Apple(Iused Granny smith)cored peeled and shreaded
1/4 C margarine melted
1 Egg
Crumb topping
1/4 C flour
2T+1t Sugar(please I left out the t)
2T margarine
1/8 t cinnamon

prepare batter: (it said line with paper baking cups, my muffins stuck in the paper so I think next time I spray a little pam in the metal pans)
preheat oven to 400
mix first 4 ingredients. In 2C measure combine milk, apple, margarine and egg, pour into dry ingredients and stir until combined do not over mix mixture will be lumpy fill 2/3 full

topping: In bowl combine all ingredients stirring well until blended sprinkle and equal amount on top of all the muffins, bake for 15-20 min. Until golden and toothpick inserted in center comes out dry. Now I made 24 of these 2 days ago...I only ate 4 my, the rest of my family finished them off yesterday....

Turkey Upside-Down Pizza

15 ounces ground turkey
1/4 cup celery, chopped
Dash of garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 cups sliced vegetables of your choice, i.e. sliced mushrooms, chopped green pepper, diced
onions, etc.
2 cups tomato or pizza sauce
6 ounces mozzarella cheese
1 8-ounce can reduced-fat refrigerated crescent rolls

In a pan sprayed with nonstick cooking spray, saute turkey, celery, garlic powder, salt and pepper. Pour in a 9 X 13 baking pan. Top with your choice of options: i.e. green pepper, mushrooms, onions, etc. Evenly pour the tomato sauce over this and top with cheese. Unroll crescent rolls and lay over the top on cheese. Bake in a 350 degree oven for 30 minutes or until top is golden brown. Let sit for 5 minutes before slicing. Divide evenly into 8 equal pieces.

Each serving = 5 Weight Watcher points or
2-1/2 Protein, 1 Bread, 1 Vegetable

Chicken and Swiss Salad

Okay this is my favorite Lunch salad when I am dieting...and my favorite homemade dressing for it:

Chicken Swiss Salad
Dressing:
1/2 C Plain Yogurt
2 T low fat Mayo
1 T parsley chopped fresh
or 1/2T dried
1tsp prepared Mustard
1/4 tsp garlic powder
Blend cover and chill
if you prefer you can add 1 tsp italian seasoning and omit the other seasonings

1 head lettuce
12 slices of green pepper
6 -1 oz slices of Chicken or Turkey
6-1oz slices of Swiss Cheese
6-slices of purple/red onion
24 slices of Cucumber 1/4" thick
12 slices of tomatoe

this makes 6 salads

I wedge the lettuce into 6 wedges, one wedge on each plate. sliced to 1/2" thick then top with 2 green pepper rings, 1 slice of cheese, 1 slice of onion, 1 slice of chicken, 4 slices of cucumber, 2 slices of tomato. top with 2T of dressing. Each salad is about 225 calories.
I cut the chicken and cheese into strips. and just make one salad each day. For variety I add a little spinach leaves for extra iron. and I have 1 slice whole wheat bread toasted no butter with the salad.

Classic Beef Chili

Ingredients
1 lb. lean ground beef (10% or less)
2 garlic cloves, finely chopped
2 tbsp. chili powder
1 tsp. ground cumin
1 can (28 oz.) crushed tomatoes
1 can (15 oz.) red kidney beans, rinsed and drained
1 sweet onion, chopped
1/4 cup canned diced chilies
2 tbsp. tomato paste
Oregano sprigs for garnish

Instructions
1. In a large nonstick skillet cook beef and garlic over medium heat, stirring with a wooden spoon to break up meat, until browned; drain. Add chili powder and cumin; stir to combine.
2. Combine tomatoes, beans, onion, chilies, and tomato paste in slow cooker; stir in beef mixture. Cover and cook on High until flavors are blended, 4 - 5 hours.

Homemade Salsa

1 regular can diced tomatoes
1 regular can mild rotelle
1 bunch chopped fresh cilantro
2 green onions cut up green and half of white part
1/2 tsp salt
1/4 tsp pepper
1-2 tsp lemon juice

Put it all in a blender and blend. Eat with whatever you'd like! YUMMY!
